Material
- Cooked Basmati or Jasmine rice – 2 cups
- Fresh pineapple (cut into small pieces) – 1 cup
- Onion (finely chopped) – 1 medium size
- Green chillies (finely chopped) – 1-2
- Garlic cloves (crushed) – 2-3
- Capsicum (finely chopped) – ½ cup
- Carrot (chopped) – ½ cup
- Soya sauce – 1-2 tbsp
- Salt – as per taste
- Black pepper powder – ½ tsp
- Coriander leaves (chopped) - for garnishing
- Oil or butter – 2 tablespoons
- Cashews or raisins (optional) – 2 tbsp
- Heat oil in a pan, add garlic and green chillies and fry lightly.
- Now add onion, capsicum, and carrot and fry for 2 to 3 minutes.
- Add pineapple pieces and cook for 2 minutes so that their taste and sweetness are well dissolved in the rice.
- Add cooked rice and all the spices, soya sauce, salt, pepper, and mix well.
- Cook on a low flame for 3 to 4 minutes so that all the flavours mix well.
- Garnish with green coriander and cashews or raisins.
- Serve hot.
