When you want the perfect, crispiest piece of bacon, you should start cooking it on a cold pan. This might seem counterintuitive to many home cooks, as most require a pan to be heated first. However, this is not the case when it comes to frying bacon.
The reason for this is actually quite simple. Bacon that heats up slowly after first being placed on a cold pan will slowly render out its fat, which results in a crispier piece of bacon.
When bacon is placed straight onto a hot pan, the fat can cook off too quickly and you won't get these tasty benefits. Adding the bacon onto a cold pan and letting the fat gradually heat up will result in more evenly cooked bacon, rather than strips with burnt edges. Good things come to those who wait, after all.
